2 C all purpose flour
2 C granulated sugar
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 tsp cinnamon
3 C finely shredded carrot
1 C cooking oil
4 eggs

Directions:
Directions:
Grease and lightly flour 9x1 1/2 inch round baking pans. In a mixer bowl combine dry ingredients. Add shredded carrot, cooking oil, and eggs, beating with mixer till combined. Beat on medium speed for 2 minutes. Turn into prepared pans. Bake in 325º oven for 45 minutes or till tested done. On wire rack cool in pans 10 minutes. Remove from pans and cool thoroughly.
