2 eggs
1 C cooking oil
1 tsp. vanilla
1 1/2 C granulated sugar
2 C all purpose flour
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
4 C finely chopped apple, pared and cored
1 C chopped walnuts
1 C powdered sugar, sifted
2 T milk
1 tsp. vanilla

In large mixer bowl, beat eggs till light and fluffy. Add oil and vanilla; beat till thickened, about 2 minutes. Gradually beat in sugar. Stir together flour, baking soda, salt, and cinnamon; add to creamed mixture alternately with apples and nuts, beating well after each addition. Beat at medium speed 3-4 minutes. Turn batter into well greased and lightly floured 8 1/2 inch fluted tube pan. Bake in 350º oven 60 minutes or till cake tests done. Cool in pan 15 minutes. Remove from pan; cool on wire rack. Combine sugar, milk, and vanilla; beat till smooth. Drizzle icing atop cake.
