1/4 C granulated sugar
2 T biscuit baking mix
2 tsp. cinnamon
2 T butter
2 C biscuit baking mix
2 T sugar
1 egg
2/3 C water or milk
1 C finely chopped apple
Directions:
Directions:
Mix sugar, baking mix, cinnamon and butter till crumbly. Set aside for topping. Grease 8x8 inch baking pan. Mix baking mix, sugar, egg, and water or milk. Beat vigorously 30 seconds. Stir in apple. Spread batter in pan; sprinkle with topping. Bake in 400º oven for 25 minutes or till wooden pick inserted off center comes out clean. Refrigerate leftover coffee cake.
