6 med potatoes, peeled and cubed
1/2 cup onion, chopped
1/2 cup celery, chopped
1/2 cup carrot, chopped
2 Tablespoons butter
2 Tablespoons cornstarch
1-1/2 cup milk
2 Tablespoons chicken bouillon cubes
1 cup grated cheddar cheese
1 cup cooked ham or turkey, chopped
1 cup corn
1 quart water

Directions:
Directions:
In large saucepan, combine potatoes, onion, carrots, celery and water.
Bring to boiling and cook, covered, for about 15 minutes.
Combine cornstarch, butter and milk, adding cornstarch gradually so it doesn't become lumpy.
Add milk mixture and chicken bouillon granules to potato mixture.
Stir and cook until slightly thickened.
Cook for 2 minutes more.
Stir in the cheese until it melts.
Add ham or turkey and corn.
