Ingredients: 3 tbls butter, melted 1 c white sugar 3 egg yolks 1 c cake flour 1 tsp baking powder 1/4 tsp salt 1 tsp vanilla extract 4 c milk 3 egg whites 1 tbls cinnamon sugar (optional) refrigerated pie shell

Directions:Pre-heat oven to 375° F. Coat a 9 inch deep dish pie plate with vegetable oil cooking spray and lay in the pie shell. In a large bowl, mix together the butter and sugar until smooth. Add the egg yolks and beat until light and fluffy. Sift in the cake flour, baking powder, and salt and stir until well blended. Mix in the vanilla and milk. In a separate bowl, whip the egg whites till they are stiff using and electric mixer. Fold into batter. Pour into pie plate and sprinkle cinnamon sugar over the top. Bake for 25 minutes. Reduce heat to 325° F. And continue baking for 25-30 more minutes, or until the center is set when you gently jiggle the pie. Serve hot or cold.
Tip: These can also be made as mini pies with 5 inch pie shells. We would double the recipe and make individual mini pot pie sized desserts. This way we had the option to not sprinkle on the cinnamon for those who didn’t want it. |
