1 lb thin veal steak, cut into 6 pieces
1/2 tsp. salt
1/8 tsp. pepper
1 egg
2 tsp. water
1/3 C grated Parmesan
1/3 C fine bread crumbs
1/4 C cooking oil
2 T butter
1 minced onion
1 6 oz can tomato paste
2 C hot water
1 tsp. salt
1/2 tsp. thyme, crushed
1/2 lb Mozzarella cheese, sliced thin

Directions:

Sprinkle cutlets with salt and pepper. Beat egg with water, dip veal in egg. Combine cheese and crumbs, and roll veal in mixture. Heat oil in large skillet. Fry 3 pieces of veal at a time, browning 3 minutes on each side. Place in 13x9x2 inch baking dish. In same skillet cook onion in butter till tender, but not brown. Add tomato paste, hot water, salt and thyme. Simmer mixture 5 minutes, scraping browned bits from bottom. Pour 3/4 of sauce over veal; top with slices of cheese, pour rest of sauce over. Bake in 350º oven for 30 minutes.
