2 eggs, beaten
3/4 C soft bread crumbs (1 slice bread)
1/2 C tomato juice
2 T flaked parsley
1/2 tsp. oregano, crushed
1/2 tsp. thyme, crushed
1/2 tsp. basil, crushed
1/4 tsp. salt
1/4 tsp. pepper
1/2 tsp. garlic powder
2 lbs ground beef
8 thin slices boiled ham
1 C shredded mozzarella cheese (4 oz pkg)
3 slices mozzarella cheese, halved diagonally

Combine eggs, bread crumbs, tomato juice, parsley, oregano, thyme, basil, salt, pepper, and garlic powder. Add beef; mix well. On foil or waxed paper, pat meat to 12x10 inch rectangle. Arrange ham slices atop of meat, to within 1 inch of all sides. Sprinkle shredded cheese over ham. Starting from short end, carefully roll up meat, jelly roll fashion, using foil to lift; seal edges and ends. Place roll, seam side down, in 13 1/2x8 3/4x1 3/4 inch baking dish. Bake in 350 oven for 1 1/4 to 1 1/2 hours or till meat is done. Arrange cheese halves over top of roll; return to oven and bake 5 minutes more or till cheese melts.
