4 tbsp olive oil
1 onion, chopped
1 small green pepper, chopped
2 garlic cloves, minced
1 celery stalk, diced
2 large tomatoes, peeled and chopped
1 cup long-grain rice
1/2 tsp salt
1/4 tsp fresh pepper
2 cups chicken broth

Directions:
Directions:
1. Lightly oil a 2-quart casserole dish.

2. Sauté onion, pepper, garlic, celery and mushrooms over low heat for about 5 minutes.

3. Transfer to the casserole dish and add tomatoes, rice, salt and pepper.

4. Pour in the broth, stir, cover and bake at 375º for 30 minutes.

5. Stir again and bake another 30 minutes.
