7 medium potatoes
1/4 cup butter or margarine, melted
1 small onion, chopped
1 tsp salt
1 8-ounce container sour cream
1 can (10 3/4 oz) cream of chicken soup
2 cups shredded cheddar cheese
3 tbsp butter or margarine melted
1 1/2 -2 cups herb-seasoned stuffing mix

Directions:
Directions:
1. Peel and cut potatoes into 1/4 inch strips, set aside.

2. Combine 1/4 cup melted margarine, onion, salt, pepper, sour cream and cream of chicken soup in a bowl.

3. Lightly butter inside of a 5 qt crock pot and place potatoes into pot.

4. Mix 2 cups of shredded cheddar cheese with potatoes. Pour sour cream soup mixture into potatoes and mix well.

5. Cover top of potato mixture with stuffing and drizzle with 3 tbsp of butter.

6. Cover and cook on low 8-10 hours or 5-6 hours on high.
