2 cups flour
1 tsp cinnamon
3/4 cup brown sugar
1 cup sugar
2 tsp baking soda
1/2 tsp salt
1/2 cup oil
1/2 cup applesauce
1 tsp vanilla
5 eggs
1/2 cup pecans, chopped
1/2 cup dates
3 cups carrots, finely grated
1 3 oz package cream cheese
1 tbsp milk
2 1/2 cup powdered sugar
Salt to taste

Directions:
Directions:
1. Sift together flour, cinnamon, sugars, soda and salt in large bowl.

2. Add oil, applesauce, vanilla and eggs. Mixing well.

3. Add carrots, dates and pecans. Mix well.

4. Pour into greased and floured 9 x13 pan. Bake for 40-45 minutes or until toothpick comes out clean.

5. After cake has cooled, frost with cream cheese frosting.

6. For cream cheese frosting, blend cheese, milk, vanilla and salt. Gradually add sugar, beating until frosting is smooth and of spreading consistency. If necessary, add additional milk 1 tbsp at a time.

Bake at 350º
