2 cups white rice
1 cup cubed ham
5 eggs
2 cups frozen peas
3 tbsp butter or margarine

1. Plan ahead (rice must be done right before serving)

2. Boil 4 cups of water in a medium saucepan. Add the two cups of white rice, cover with lid and let rice boil for 7-10 minutes or until water is almost completely evaporated. Let rice stand, still covered. When rice is completely cool, put it in a large bowl, cover and refrigerate (this lets the rice become cold and less sticky so that it fries easier).

3. Preparing the fried rice: Place the butter/margarine in a large skillet (I use a wok). When the butter is melted add the rice and let sizzle on medium to high heat. The rice will start to brown a little. When it does, pour the scrambled eggs over the rice and stir it all together.

4. When eggs are well cooked in with the rice change the heat to a low setting and add the peas and ham and keep on low heat until ham and peas are hot. Your breakfast-fried rice is done and ready to serve!
