3 1/2 C flour- Total:
1 C Whole wheat flour
2 1/2 C unbleached flour
3 heaping T of each: soy flour, dry milk and wheat germ
3 C sugar
2 tsp baking soda
1 1/2 tsp salt
1 1/2 tsp cinnamon
1 tsp ginger
16 oz can or 2 C pumpkin
1 C canola oil
1 C water
4 eggs

Directions:
Directions:
Preheat oven to 350 º. Grease (not oil) and flour bottoms of 2 loaf pans. In a large bowl, combine all ingredients. Blend at low speed until moistened then beat at medium to high for 3 minutes. Pour into prepared pans and bake 1 hour to 1 1/2 hours, until toothpick inserted in center comes out clean.

Cool 5 minutes, remove from pans. Cool completely. Wrap tightly.
