12 eggs
8 oz cream cheese
8 slices bread, cut to fit
½ tsp salt
2 cup milk
1/3 cup pure maple syrup
1 tsp vanilla
Cinnamon to taste – optional if preferred
1-2 cup blueberries, fresh or frozen

Sauce:
1 cup maple syrup
1 cup frozen blueberries

Directions:

1. Spray 9x13 pan cooking spray. Line pan with whole grain bread.

2. Spread cubed cream cheese and fresh or frozen blueberries over bread.

3. Beat a dozen eggs with milk, salt, vanilla and maple syrup. Pour into pan. Cover and let stand overnight in the refrigerator. Bake.

4. Mix pure maple syrup and fresh or frozen blueberries in saucepan and simmer. Use potato masher to mash up the blueberries. Serve over the French toast when done.

Bake at 350º for 30 minutes. Makes 6-8 servings.
