1/4 c margarine or butter
2 heaping tbsp flour
Potatoes, sliced, peeled
Onions, sliced
Cheddar cheese (optional)
Salt & pepper

Directions:
Slice the onions - however many you want to go with the potatoes, and soften them in the microwave for 4-5 minutes.Layer with potatoes in a large casserole dish. Use a 1 quart saucepan and fill it about half full of milk (approx 3 or 4 cups). Whisk in your 2 tablespoons of flour. salt & pepper and cook over medium heat. Add your margarine or butter. Stir constantly until sauce thickens. Pour over your sliced potatoes and onions. Sprinkle a little salt & pepper on top.
*If you want to make this with cheese you can add chopped pieces of cheese to sliced potatoes and onions or add shredded cheese to your milk mixture and cook in saucepan until your cheese melts and sauce thickens.
Cook in 350º oven until the potatoes are cooked. (Cover with foil while cooking.) Great with ham.
