2 - 9 Inch Pastry Shells
12 oz Can Evaporated Milk
4 Cups Fresh Spinach
2 Cups Chopped Mushrooms
8 Stalks of Green Onion Chopped
2 Cups Swiss Cheese
2 Cups Extra Sharp Cheddar Cheese
4 Eggs
1 Tsp Ground Mustard
1 Tsp Cayenne Pepper
Salt to taste

Pre-heat oven to 350⁰ F.

Punch holes in the pastry shells with a fork. Bake shells for 10 minutes.

While pastry shells are baking prepare the filling as follows:
Sautee mushrooms in extra virgin olive oil and let cool. Steam spinach and drain all liquid. Let cool. In a separate bowl beat the eggs. Add spices and salt to eggs and beat well. Add evaporated milk and stir well. Add drained spinach and mushrooms; coat well in the mixture. Add cheeses and green onion.

When shells are baked, remove from oven and add filling. Return to oven on a cookie sheet for easy removal once baked and to minimize any spills. Bake for 45 minutes or until golden and set.
