2 TBSP BUTTER
2 TSP SALT
PEPPER OR PAPRIKA TO TASTE
1 1/2 TBSP FLOUR
1 1/2 C MILK
2 EGGS, SEPARATED
2 C SHREDDED KIPPERED SALMON
4 C FRESHLY MASHED OR RICED POTATOES
1 C GRATED ORE THINLY SLICED CHEESE

MAKE A CREAM SAUCE BY MELTING BUTTER, ADD SALT, PEPPER (OR PAPRIKA) AND FLOUR, STIRRING TO A SMOOTH PASTE. ADD THE MILK AND KEEP STIRRING CONSTANTLY UNTIL THE MIXTURE THICKENS; REMOVE FROM HEAT. INTO THE CREAM SAUCE PUT THE EGG YOLKS AND MIX WELL, THEN ADD THE SHREDDED SALMON, THE POTATOES, AND LAST HE STIFFLY BEATEN EGG WHITES. PLACE THE MIXTURE IN A BUTTERED BAKING DISH, COVER WITH THE CHEESE, PLACE IN OVEN AND HEAT THROUGH THOROUGHLY UNTIL THE CHEESE MELTS AND BROWNS SLIGHTLY, SERVE AT ONCE. WILL SERVE FIVE OR SIX PERSONS. CODFISH OR OTHER FLAKED FISH MAY BE SUBSTITUTED
