5 large Potatoes, peeled, washed and kept at room temperature
1 large onion, grated
1 whole egg, beaten
1/2 C or so flour
1/4 C matzo meal
salt and pepper to taste
vegetable oil or peanut oil for frying

Directions:
Directions:
Grate potatoes and onion into a large bowl and squeeze out excess water by hand or with a cheese cloth.
Add and stir in beaten egg, then matzo meal and flour. If the mix is still watery, add more flour to thicken into a loose batter. Heat oil in large frying pan (12-14 inch) over medium heat to 350º F. Add pancake mixture by tablespoons to form pancakes slowly, letting 30 seconds go by before adding next pancake to allow temp to recover. Don't crowd pan- 4-5 pancakes at a time. Let brown on side one before turning to second side. Cook on each side once. Drain on a cookie rack over a cookie sheet in oven. Salt and pepper on cookie sheet.

For vegetable latkes, use 1 potato and substitute the following vegetables for the other potatoes:
1 small zucchini
3 medium parsnips
3 medium carrots
1 C chopped parsley
