1 onion
1 clove of garlic
1 stalk of celery
1 bell pepper
1 cayenne pepper (optional)
black pepper
cayenne pepper
garlic salt
1 pack of chives
Choice of meats
Okra (if desired)

Ingredients for Roux:

Oil and flour

Using a sauce pan, heat 1 cup of oil. When oil is hot gradually add flour to create a mixture to thicken the gumbo. Flour should be added to get desired thickness, stir often to avoid burning the roux. Roux is complete when you reach a mahogany color. Remove from heat.

Directions:
Fill a huge pot with water to 1/3 its capacity and bring to boil. Once boiling stir in roux gradually to reach desired thickness and reduce to low to medium heat. Stir often to ensure roux does not stick to pot. Allow roux to cook for 1 hour and add ingredients. Once roux is cooked you may add a variety of meats (i.e. chicken and sausage, turkey, game, seafood). You may also include okra to your ingredients.
