Ingredients: Prime rib roast (bone in or out) Worcestershire sauce kosher salt garlic powder Schneider prime rib seasoning

Directions:1. Rub prime rib with olive oil and Worcestershire sauce 2. Method one: Use spray bottle of water and alternate sprits of water and a layer of kosher salt over entire prime rib. repeat multiple times until the salt crust is approx. 1/2 in. thick. Method two: Follow directions on Morton Kosher salt box and mix salt and water together and make a paste. Then spread over the entire prime rib. Again the salt crust needs to be 1/2 in ch thick Place a thermometer (digital with remote is easiest) in the thickest part of the prime rib. 3. temp. of oven should be at 170 to 190 depending on your ovens lowest setting. Place roast in the oven and monitor until internal temp. of the meat reaches 140-degrees. Mike says the secret to his recipe is keeping the meat in the oven with an internal temp. of 140 to 145 as long as possible. Keep in at least one to two hours once you have reached the desired temp. This involves monitoring the temp. of the oven a lot for the last hours of cooking. 4. Once you are ready to eat, remove the meat from the oven, remove salt crust (it will be a solid piece), slice and serve. |
