4 lb. loin of pork
10 prunes
1 1/2 cups water
1 tsp. salt
1/4 tsp. pepper
1/2 tsp. ginger
2 T. flour

Directions:
Directions:
Make a sharp opening the length of the roast. Can use a round steel (for sharpening knives) and push the steel through the middle of the roast lengthwise. Cover prunes with water, bring to a boil and cool. Make sure the lid is on the pan. Reserve the liquid. Remove the prune pits. Rub opening in the roast with salt, pepper and ginger. Insert cooked prunes in opening and secure opening with skewers. Place meat in open roasting pan. Roast at 350º about 1 hour and 30 - 45 minutes. Remove meat and pour off all but 3 T. drippings. Stir in flour and slowly add 1 1/4 cups liquid from prunes. Stir over low heat until thickened and smooth. Serve gravy with sliced pork.
