3 eggs
1 cup milk
1 1/2 cups shredded cheese
salt & pepper
bacon, crumbled pieces
unbaked pie crust

Directions:
Directions:
Put foil around pie crust edge. Put bacon bits on the bottom. Mix together remaining ingredients and pour over bacon. Bake at 450 degrees for 15 minutes. Lower to 350 degrees and bake for 30 more minutes. Let stand 10 minutes before serving.

Serves 6.

Can add other ingredients to omelet, i.e. spinach, onion, green pepper, etc.

1/1/13 - Kathy: Made this recipe for breakfast for Grandma Dolores last week. It also warms well in microwave...tho the crust on the quiche can get soggy after a couple days. Prebaking the pie crust part way (10" at 450 degrees) before baking the quiche may help with the soggy crust problem.
