1 1/2 c. wheat bran
1 c. buttermilk
1/6 c. oil
1 egg
1/3 c. brown sugar
1/6 c. applesauce
1/2 tsp. vanilla
1 c. whole wheat flour
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
1/2 c. dried fruit (raisins, craisins)

Directions:
Directions:
Preheat oven to 375. Grease muffin cups.

Mix together bran and buttermilk. Let stand 10 minutes.

Beat together oil, egg, sugar, applesauce, and vanilla. Add to buttermilk/bran mixture. Sift together flour, baking soda, baking powder, and salt. Stir flour into buttermilk mixture until just blended. Fold in dried fruit and spoon batter into pan.

Bake for 15 to 20 minutes. Cool and enjoy.
