2 lb (32oz) Baby Carrots
1/4 c. Red Wine Vinegar
6 tbsp Olive Oil
2 tsp Thai Chili Paste
1.5 tsp Cumin
1 tbsp Parsley
3 cloves Garlic
2 Green Onions

Directions:
Directions:
Either boil or steam carrots until very tender, drain and set aside.
Mince the garlic, and chop the green onion.
Add all ingredients to a blender and blend until a smooth dip is created.
