1 lb chicken gizzards
1 yellow or red onion, diced
1 red pepper, diced
1 green pepper, diced
3 green bananas, sides scored and ends removed
1 c milk
1/2 c olive oil
1/2 c vinegar

Directions:
Directions:
Boil chicken gizzards in water for 1 hr. Bring water and milk to a boil then add the green bananas with skins on and boil for 20-30 minutes, cook al dente. Peel bananas, cut into pieces. Combine all ingredients and mix well.
