3 cups granulated sugar
1/2 cup light corn syrup
2/3 cup warm water
2 egg whites
1 teaspoon vanilla extract or another flavor you like
1 cup chopped nuts of your choice or none at all

Directions:
Directions:
Line a cookie sheet with aluminum foil and then spray the foil with non-stick cooking spray and prepare a spoon with non-stick spray. The spoon is going to be used to drop the mixture onto the foil to cool.

Combine the first three ingredients in a large heavy-bottom saucepan over medium heat and stir constantly until all the sugar is dissolved. Continue to cook without stirring until the mixture reaches hard-ball stage on a candy thermometer (250 degrees F).

Beat the egg whites in a bowl until stiff peaks form and then slowly pour half the sugar syrup mixture into the egg whites while beating constantly.

Continue cooking the remaining sugar syrup mixture until it reaches soft-crack stage on a candy thermometer (270 degrees F).

Drizzle the remaining sugar syrup mixture into the egg whites while beating and continue to beat until the mixture is thick and shiny and holds its shape.

Stir in the vanilla and nuts until mixed well and then drop by spoonfuls onto the aluminum foil and let cool until set. This will take several hours.

Or you can pour the mixture into a 9 inch square pan and let it cool and then cut the candy into squares if you don't want to drop it from a spoon onto the foil.

You can also use candied cherries or other fruits instead of nuts.
