1 lb. flank steak

Meat marinade:
1 Tbsp. cornstarch
1 Tbsp. light soy sauce
1 Tbsp. sherry

1 medium onion (cut into 1 in. chunks)
2 medium tomatoes (cut into wedges)
1 medium green pepper (cut into wedges)
1 Tbsp. brown sugar
1 tsp. salt
2 Tbsp. curry powder
4 Tbsp. ketchup
1 Tbsp. oyster sauce
3 Tbsp. oil

Slice flank steak 1/8 in. thick across the grain. Marinate for 15 min. Sprinkle brown sugar over tomato wedges.

Cooking:
Heat wok: Add 1 Tbsp. oil and heat. Stir fry onion with green pepper for 1/2 min. Add 1 Tbsp. water, cover for 1/2 min. Uncover and stir until water has evaporated. Set aside. Pour 2 Tbsp. oil into wok and stir in the curry powder. Let the flavor release (a few seconds) and add beef and salt. Stir fry until 3/4 done about 1 min. Add tomato wedges. Stir until just heated through. Add Ketchup and heat until sauce bubbles. Add all other vegetables and oyster sauce. Mix well.
