1 1/3 c. shortening (Crisco)
1 1/2 c. sugar
2 c. mashed potatoes (can use instant if necessary)
1 c. milk
1 T. salt

2 pkg. Rapid Rise yeast dissolved in 1 c. lukewarm water (Do Not use hot water as it will kill the yeast)

4 beaten eggs

5 c. white flour
5 c. whole wheat flour

Mix the first 5 ingredients (shortening, sugar, mashed potatoes, milk, and salt) and then bring to a boil. As soon as it starts to bubble take off the heat and let cool to lukewarm. That may take 45 minutes to an hour.

Add the yeast and eggs to the cooled milk mixture. Stir thoroughly. In a very large bowl start adding the flour to the mixture alternately (white/wheat) until the dough gets stiff.

Turn the mixture out on a floured board or pastry sheet. Knead the dough (fold over and push forward) for 15 minutes. Then place the dough in a container with a small amount of vegetable oil. Turn the dough so all of it is coated with the oil and cover. Place the dough in the refrigerator for over night. This dough will grow even in the refrigerator. This dough may be kept in the refrigerator for up to a week before baking.

In order for the dough to warm up for rising I take it out of the refrigerator the night before I'm going to bake it and let it set out all night. The next morning I make it into cloverleaf rolls (3 balls in a muffin tin). Let the rolls rise for about an hour at room temperature. Bake at 350º for about 30 minutes. Makes about 4 dozen.

This dough always rises if the cook is careful to not kill the yeast with water that is too hot. People rave about these rolls.
