1/4 c. flour
1 tsp. salt
1/4 tsp. pepper
1 chicken, cut up (about 2.5 lbs.)
1 egg, beaten
1-1/2 c. soft, fine bread crumbs
1/4 c. butter
1-1/2 tbsp. lemon juice
3/4 c. water or chicken stock
6 thin lemon slices
2 tbsp. chopped parsley

Combine flour, salt and pepper in a paper or plastic bag; shake chicken in bag, one or two pieces at a time, until well-coated. Dip chicken in egg, then in crumbs. Press crumbs on firmly to ensure they hold. Chill chicken about an hour. Melt butter or margarine in a large skillet or Dutch oven. Brown chicken slowly. Add lemon juice and water or stock. Simmer, covered, 30-35 minutes 'til chicken is tender. Add lemon slices. Cook 2-3 minutes. Sprinkle with parsley.
