1 med. eggplant, cored & chopped
1 large onion, sliced
3 large cloves of garlic, diced
1 can whole, pitted Kalamata olives
1 large red pepper, julienned
1 large yellow pepper, julienned
2 medium yellow squash, sliced
4 Roma tomatoes, chopped
2 tbsp. herbes de Provence
1/3 c. water
Olive oil spray
salt and pepper to taste

Directions:
Directions:
Saute' onions and garlic in a non-stick skillet coated with olive oil spray, until golden.

Put in a large pot or dutch oven with remaining ingredients and cook briskly until done, stirring frequently.

Serve when liquid is sufficiently reduced and vegetables are cooked through.
