Ingredients: 3 bananas 1 box of vanilla wafers (regular or low fat) 1 box instant vanilla pudding (can use sugar free-fat free) cool whip or whipped cream, optional ( fat or sugar free)

Directions:line a ceep dish casserole with vanilla wafers. Put them up the sides , if possible. Cut bananas into slices and layer 1 1/2 banana on top of wafers. Mix instant pudding according to package directions. Pour half on the bananas, and repeat another layer ending with the pudding. Cover top with cool whip and refrigerate until ready to serve. Refrig any left over pudding. It will last 1 more day, but then gets soggy.

Notes: This is quick and very good. It looks good made in small, clear dishes or footed glasses. You may add cherry on top for color. A layer of crushed pineapple that has been drained can be added on top of bananas. Chopped pecans or peanuts are good on top of cool whip. Try beating in 1/4 cup peanut butter with pudding mix for a different flavor. Use chopped peanuts on top for this. Try this for your friends dessert when you have them for dinner. You can double the recipe or use a large pkg. of pudding mix for a bigger amount of custard. I make this with low fat vanilla wafers, low fat milk and sugar, fat free instant pudding mix. No fat cool whip It doesn't have alot of calories this way.
