1/2 cube butter
1/4 C flour
8-10 oz Velveeta cheese
1/2 jar Cheese Whiz
1 extra large potato with skin (cut in small cubes)
3 stocks celery (chopped)
2 large carrots (chopped) or 18 baby carrots (chopped)
1 medium onion (chopped)
1/2 head broccoli (chopped)
1/2 head cauliflower (chopped)
salt & pepper to taste
2 full pinches of onion salt

You need 2 large pots!
1st pot: Melt butter and flour on low heat. Add Velveeta & Cheez Whiz and melt until smooth. Salt and pepper to taste and add onion salt.
2nd pot: Fill with water (about 1 gallon). Bring to boil and add potato with skin, onion, celery and carrots and boil for 12-15 minutes until tender.
Add cauliflower and broccoli and boil for 5-6 more minutes.
*Add 3-5 cups of the veggie broth to Cheese Mix. Mix well. Drain the vegetables (do not rinse) and add to cheese sauce.

Simmer on low for 30 minutes to 1 hour.
