1/2 C. diced salt pork (bacon)
4 Tbsp. butter
1 clove garlic
2 med. onions (finely chopped)
4 Tbsp. parsley (minced)
4 Tbsp. celery leaves (minced)
2 potatoes (diced)
4 Tbsp. flour
3 cans chopped clams
1/2 cup white wine
1/2 C. white onion
1/2 tsp. thyme, rosemary, basil
1 bay leaf
4 C. rich milk
2 C. half and half
salt and pepper
1/2 tsp. paprika

Directions:
Directions:
Saute salt pork until brown. Add butter and vegetables (except potatoes) until soft but not browned. Add potatoes. Saute 3-5 minutes, Add flour until absorbed, add clam juice and wine. Stir and cover over med. heat5 minutes. Add spices, stir well. Add milk and half and half, let simmer 20 minutes, stirring occasionally. Add clams stir and simmer 5-8 minutes. Add salt and pepper to taste. At last minute stir in 3Tbsp. butter and paprika. Serve
