1 Paleo Pie Crust
2 c. Pumpkin Puree
1 lg Egg
3 Egg Whites
1/4 c. Maple Syrup
1/2 c. Coconut Milk
1 tsp Vanilla Extract
1/2 tsp Cinnamon
1/4 tsp Nutmeg
1/4 tsp Cloves
1/4 tsp Ground Ginger
1 tbsp Arrowroot Powder
1/8 tsp Salt

Preheat oven to 325º
In a stand mixer, combine all ingredients and beat until well combined.
Pour ingredients over pie crust and bake 20 minutes.
Remove pie from oven and place foil over the pie crust edges, return pie to oven and continue to bake for 20 - 30 minutes longer or until the center of the pie is just set.
Remove from oven and allow to cool completely before covering and placing in the refrigerator.

This pie takes a while to bake and so it is important to cover the crust edges after 20 minutes or you'll end up with a great tasting pie but with a burnt crust.
