1 tsp Onion Powder
1/4 tsp Cumin
1/4 tsp Black Pepper
1/4 tsp Nutmeg
1/4 tsp Oregano
1/4 tsp Fennel Seed
1/2 tsp Red Pepper Flakes
1/4 tsp Ground Ginger
1/2 tsp Ground Mustard
1/2 tsp Sage
1 tsp Garlic Salt
1/2 tsp Salt
1 Egg

Lightly beat the egg and in a medium mixing bowl combine all ingredients mixing thoroughly. Put the sausage in an airtight container and refrigerate at least 8 hours but overnight if possible to allow the flavors to combine.

This sausage is excellent. It does not have an overpowering salt taste so you really taste the other seasonings. This sausage is also not super greasy like most. Finally, some other options would be to add a bit of cayenne or chipotle pepper to heat things up.
