1 c. clam juice
1 c. heavy cream
1/2 c. + 3 t. good white wine
3 T. tomatoe juice
1/2 t. safron threads
8 - raw shrimp, peeled and deveined
8 - raw halibut,1" chunks
8 cooked lobster
7 T. butter
1 T. flour
salt
pepper
3 c. julliened leeks, white and green parts
1 c. panko bread crumbs
1/3 grated parmesean
2 T. fresh parsley

Bake 375º
sauce: combine clam sauce, cream, 1/2 c. wine, tomato puree and saffron in med. sauce pan. Bring to boil, low heat, add shrimp until cooked, take shrimp out, do the same to halifut and shrimp. Cook sauce until reduced by 1/2. mix the butter with flour and add to sauce, whisk in. add salt and 1/2 t. pepper, simmer, stirring constantly , until thickened, about 5 minutes. Melt 3 T. butter in saute pan, add leeks, carrots and cook 5 minutes. add 3 T. wine.

combine panko, parmesean, parsely, tarragon, garlic. melt 3 t. butter and add crumbs.
layer, seafood, sauce, top with crumb mixture.

bake for about 20 minutes or until thickened.
