4 bacon strips, diced
1 medium onion, chopped
2 garlic cloves, minced
1 lb chicken or ham cubed
2 large potatoes peeled and diced
1 T oil
1/2 c frozen peas, thawed
1/2 c frozen corn, thawed
2 T. fresh parsley
3/4 tsp salt
4 eggs

Directions:
Directions:
cook bacon until crisp, remove and drain. Use the bacon grease drippings to cook onion and garlic until tender. Stir in chicken or ham, potatoes adn oil. Cover and cook 10 minutes or until the potatoes and chicken are tender, stir in peas, corn, parsley and salt/pepper. Make 4 wells in the hash, break an egg into each well. Cover and cook over low heat for 8-10 minutes or until eggs are completely set. Sprinkle with bacon and serve!
