1 stick butter
5 egg yolks
1 cup buttermilk
1/2 c. veg. shortening
2 c. all purpose flour
1 tsp. vanilla
2 c. sugar
1 tsp. soda
1 c. coconut
1/2 c. chopped pecans
5 egg whites stiffly beaten

Directions:
Directions:
Cream butter and shorting. Add sugar, beat. Add egg yolks and beat. Sift flour with soda. Add flour alternately with buttermilk to cream mixture. Stir in vanilla, coconut and pecans. Fold in egg whites. Pour in 3-9” cake pans. Bake at 350* for 25 minutes. Let cool.

Cream Cheese Icing
1- 8 0z. cream cheese, soften
1 tsp. vanilla ½ stick butter 1 lb. powdered sugar
CREAM CHEESE ICING
1- 8 0z. cream cheese,softened 1 tsp. vanilla ½ stick butte
1 lb. powdered sugar
Beat cream cheese and butter until smooth. Add powdered sugar. Mix and add vanilla. Spread on top and sides of cake. Garnish on top and sides with ½ c. chopped pecan pieces.
