5 large baking potatoes
1 (8 oz) sour cream
1 cup shredded Mexican cheese blend
1 tsp salt
½ cup chopped green onion
½ tsp pepper
1 (8 oz) cottage cheese
¼ cup melted butter

Directions:
Directions:
Preheat oven to 350 degrees. Spray a 9x13 baking pan with nonstick cooking spray, set aside.
Wash, peel and dice potatoes. Cook in boiling water until tender, drain. Place potatoes in large bowl and mash. Add cheese, onion, sour cream, cottage cheese, butter, salt and pepper. Mix well. Transfer mixture to prepared pan and bake for 20 to 25 minutes or until light brown.
