Cake:

2 cup flour, sifted
2 tsp baking powder
1 1/2 tsp baking soda
1 1/2 tsp salt
2 tsp cinnamon
2 cup sugar
1 1/2 cup oil
4 eggs
2 cups finely shredded, pared, carrots
1 8oz can crushed pineapple, drained
1/2 cup walnuts, chopped
1 3.5oz can flaked coconut

Cream Cheese Frosting

1/2 cup butter
1 8oz pkg cream cheese, softened
1 tsp vanilla
1 1lb box powdered sugar

Directions:
Directions:
Sift together flour, baking powder, baking soda, salt and cinnamon in mixing bowl. Add sugar, oil and eggs. Beat at medium speed with mixer one minute. Stir in carrots, pineapple, walnuts and coconut. Pour into 3 greased and floured 9 inch round cake pans. Bake at 350º for 40 minutes or until cake tested, comes out clean. Cool in pans on racks for 10 minutes. Remove from pans. Cool

While cooling, prepare cream cheese frosting.

Cream together cream cheese, butter and vanilla in bowl at medium speed of mixer. Gradually add sugar, beating well until smooth and creamy.

Fill layers, and frost top and sides of cake.
