1/4 cup hot peanut oil
2 cups uncooked chicken, cut into very flat narrow 3-inch strips, about 1/4 inch wide (2 pounds chicken breast or boneless thighs)
1 cup celery, cut in very narrow 3 inch strips
2 cups bok toy cut in narrow 3 inch strips
1/2 cup Chinese water chestnuts, sliced thin
1/2 pound sauteed mushrooms
2 cup fresh bean sprouts
1 teaspoon salt
1/2 tsp garlic salt
4 Tbl cornstarch, combined with 1 cup chicken stock
1/2 cup pimento strips

In a large skillet, heat oil. Saute chicken for several minutes, stirring continuously. Then cover, and steam chicken for 10 minutes. Add everything else, blend well, cover skillet and cook for 5 to 6 minutes, until thick and glazy. Thin with chicken stock if too thick.
To serve, place on a bed of white rice, and garnish with 1 cup chopped toasted almonds and/or Chinese dry noodles, and chopped green onions.
