2 (2.1 oz) pkgs frozen mini phyllo pastry shells, thawed
1 c. lowfat cottage cheese
1 large egg, lightly beaten
1/4 c. grated parmesan cheese
1 tsp Italian seasoning

Garnish: diced pimentos, commercial pesto sauce

Directions:
Preheat oven to 350º. Place pastry shells in ungreased mini-muffin pans; set aside. In mixing bowl, combine remaining ingredients. Spoon mixture into pastry shells.

Bake for 20 minutes, or until centers are firm. Garnish, if desired.
