4 Cube steaks
½ tsp Salt
1 ¾ tsp Pepper
1 cup AP flour
2 Eggs, lightly beaten
¼ cup Shortening
1 cup milk

Directions:
Directions:
Season meat with ¼ tsp salt and ¼ tsp pepper. Set aside.

In shallow dish mix flour with 1 tsp pepper. Dredge each steak in flour. Dip in beaten egg, then dredge in flour again

Heat shortening in skillet. Fry steaks 3 to 4 minutes each side. Drain on paper towels

Pour off all but 2 tbsp of fat. Sprinkle two tbsp of dredging flour into oil.

Cook over medium heat for 1 minute scraping up any browned bits from bottom of skillet.

Gradually whisk in milk, cook stirring frequently 3 to 4 minutes. Add ¼ tsp salt and ½ tsp pepper
