1 lb. turkey giblets (liver/gizzard/heart...any combo...can use chicken too!)
2 qt. chicken stock...and optional 2 bouillon cubes
3 stalks celery, diced
1 small onion, diced
8 oz. sage-flavored sausage
1 stick butter
6 pcs. stale bread or toast, crumbled
1 bag herb crushed stuffing mix
1/2 t salt
1/2 t pepper
1/2 t sage crumble (opt)
1/2 t poultry seasoning (opt)

Directions:
Directions:
1. Simmer giblets, onion, & celery in chicken stock, about 1 hr. until tender.

2. Remove vegetables & meat. Strain stock & save for later.

3. Grind/chop the meat & vegetables in a food processor.

4. Brown sausage in butter & add to 1/2 of giblet mixture. (Freeze remainder for later use or discard).

5. Mix breadcrumbs & stuffing mix…add to giblet mixture. Mix in 2 eggs & salt/pepper. Add just enough saved chicken stock until mixture is wet. Cover with foil.

6. Bake at 375 degrees; covered for 20 minutes & uncovered for 15 minutes longer. …OR AS GRANDMA WOULD DO.....FREEZE IT!!!!!
