1 pie crust, partially baked for 10 minutes (see double pie crust recipe)
1 1/2 cups granulated sugar
1 tbl. flour
Grated zest of 1 lemon (about 1 tbl.)
4 large eggs, lightly beaten
1 cup buttermilk
1 stick butter, melted
Sweetened whipped cream for garnish

Directions:
Directions:
Preheat the oven to 350º. Combine sugar, flour and lemon zest, then whisk in eggs. Stir in the buttermilk and melted butter. Pour the buttermilk mixture into the pie shell and bake until set and golden, about 40 - 45 minutes.
Cool to room temperature before serving, then garnish each slice with sweetened whipped cream. Store in refrigerator.

Andrew is a big buttermilk pie fan and we were challenged to find one to fulfill his Thanksgiving request. This one, adapted from Emeril, is light and faintly lemony. We love its subtle simplicity.
