1 cooked lobster (1 1/2 - 2 lbs.)
3 Tbsp. butter
3 C. milk
Salt and pepper
1/4 C. sherry
1 C. heavy cream

Directions:
Directions:
Remove the meat from the lobster shells and cut into cubes (include the tomalle). Melt the butter in a heavy pan and add the lobster and tomalle. Cook slowly for 5 minutes; stirring constantly. Add the milk and cream very slowly while stirring constantly. Do not boil. Season with salt and pepper. Let stand for 24 hours. When ready to serve, add sherry and heat very slowly. Do not boil. Make sure stew is made the day ahead of serving.
