1 lb hamburger
1/4 C onion, chopped
3 T butter or margarine
3 eggs
1 bunch fresh spinach or 1 bag fresh spinach, washed and chopped
1/2 lb Velveeta cheese, grated

Directions:
Directions:
Brown hamburger and chopped onion; drain grease. Add butter and heat on medium.

When heated, add eggs and scramble into hamburger mixture.

When eggs are scrambled, add the spinach until all is cooked.

Top with grated cheese, cover and simmer on very low heat until cheese is melted.

Serve on top of or with noodles, rice, or mashed potatoes.
