3 lbs. medium potatoes
1/4 C. finely diced cooked bacon
1/4 C. onion, chopped
1-1/2 T. flour
1-1/2 T, sugar
2 t. salt
1/4 t. pepper
2/3 C cider vinegar
1/3 C water
1/2 t. celery seed
Chopped parsley

Directions:
Directions:
1. Cook potatoes in jackets until soft. Then peel & slice thin or cube potatoes.

2. Fry bacon until crisp; remove/drain on paper towel. Add onion to bacon grease, cook gently for 1 minute.

3. Blend in flour, sugar, salt/pepper.

4. Stir in vinegar & water. Simmer for 10 minutes – Stirring constantly.

5. Pour over potatoes; adding celery seed & parsley. Mix & serve hot.
