1 fryer (cut up)
4 cups buttermilk
4 cups vegetable shortening
4 to 6 cups self-rising flour
salt and pepper

Directions:
Directions:
Put chicken pieces in a bowl. Pour buttermilk over chicken. Put grease in frying pan. Preheat to 300º to 325º. Put flour in separate bowl. Salt and pepper each piece of chicken. (Make sure it has been dipped well into buttermilk.) Lay chicken one piece at a time in flour. Batter on both sides coating chicken well with flour. Shake off excess flour. Drop piece by piece in hot grease. Cook 10 minutes on each side. If chicken browns to quickly, the grease is too hot. Drain on paper towels.
