1 lb cabbage
1 lb potatoes
2 leeks
1 c milk
salt and pepper to taste
1 pinch ground mace
1/2 c butter

Directions:
Directions:
In a large saucepan, boil cabbage until tender; remove and chop. Set aside and keep warm. Boil potatoes until tender. Remove from heat and drain. Chop leeks, green parts as well as white, and soak in bowl of water to remove sand and grit. Drain. Simmer them in enough milk to cover, until they are soft. Season with salt, pepper, and ground mace, and mash potatoes well. Stir in cooked leeks and milk. Blend in the cabbage and heat through. Make a well in the center and pour in the melted butter. Mix well.

I use red potatoes for this dish to try to cut down on the starches. It's a wonderful dish to have on St. Patrick's Day with the corned beef and cabbage.
