1 gallon whole milk-room temperature
1/2 to 3/4 c sour cream-room temperature

Directions:
In a stainless steel large pot, pour in room temperature milk. Fork-blend room temperature sour cream until it is like liquid and add to milk. Let stand at room temperature (75-80º) until fully clabbered (perhaps 24 hours). Move pot gently to stove burner, being careful not to jostle the pot. Heat very slowly and gently until curds float up and separate from yellowish liquid. Switch off heat and let stand until cooled to room temperature. Pour into cheesecloth bag and let drip until completely dry. You may then place in the refrigerator, in a colander (bag and all) and weigh it down with a heavy bowl to extract additional moisture.
